Dutch White Asparagus Tips from NY Times
So timely - after writing this post about the white asparagus in the Netherlands, Florence Fabricant writes this short NY Times article about the same (link here). Key lessons:
1. The thicker the better! Funny - in America I've always been excited by the pencil-thin asparagus, and I looked for the same here. I had thought, the thicker the worse.
2. Should be peeled.
