The day started off again with a congee, this time with only Napa cabbage and a lot of carrot. Topped with the salted olive vegetable and doenjang.

I’d say this was a big much with the carrot, because it turned quite sweet. The salted olive vegetable and doenjang gave the right savory hit though.

Today, the PCR test very inconveniently coincided with me being in the middle of a meeting, in fact being in the middle of a discussion. I went outside with earphones in, but lost the connection. Oh well.

For lunch, I reheated my “cream of caramelized cabbage, onion, mushroom, and potato” soup, topped with sliced almonds. And I had a side of my chilled stir-fried lettuce and cucumber, and braised green beans. Kind of a perfect, quick lunch for this stressful day.

Afternoon tea included my match almond cookie, but it did not include my muffins, because they became moldy on top! I guess they were too moist and had all of that carrot and pineapple in them. Lesson learned. Must store this kind of quick bread or cake in the fridge next time.

In the afternoon, I heard someone pulling a cart around outside. Another neighborhood government delivery? Indeed it was.

We got two packs of 3 Chinese sausages (last time we got two packs of 2 Chinese sausages), and two packs of soy sauce preserved pork belly. I’m very happy with this delivery! It was like someone was reading my mind. I had been just thinking that I was lacking in some kind of bacon or meat, not to eat like a chunk of meat, but as flavoring for other dishes. I have frozen cod, shrimp, tuna fish, and plenty of dried beans, so I’m not lacking in protein, but sometimes one just wants a tiny bit of pork for a pot of beans, for example! Plus these sausages and soy sauce pork I can leave outside of the fridge. I would like to learn more about the different uses of that soy sauce pork… seems like could be used in some very local dishes.

Today I did my afternoon antigen test around 6:20pm, and was surprised I was one of the first to submit my picture (they’re supposed to be due at 6:30pm).

Then I had an (early for me) dinner, because I skipped my workout today. I had worked out three days in a row, and just wasn’t feeling it, with the rain outside and a big presentation tomorrow. I put my previously-frozen lentil shepherd’s pie in the toaster for about an hour at 200 C, to have a piping hot meal.

It was very comforting, and filling, though it didn’t look like much in the beginning (it went only about halfway up the sides of the glass container).

It’s 11pm, and now it’s time for more work to finish before that presentation. And my midnight antigen test.
