CSA Box Makes: Curried lentil stew with chard
Chard seems to be a big fixture of winter season CSA boxes. No matter, it's supposed to be one of the most nutritiously dense foods. For this week's chard, I made a curried lentil stew, with red lentils and chickpeas (recipe here). I love curry, I love lentils, and I love chickpeas. So naturally this turned out really well. I also sauteed chopped chard stems with the onions to make full use of the chard.
I topped it off with greek yogurt for the picture. For later bowls, I mixed in even more. Ever since my time in Turkey, I've developed a taste for mixing yogurt into everything. I love that tangy, creamy taste combined with both salty and sweet foods.
