CSA Box Makes: Curry Rice Noodles with Chicken
This is a recipe which I used to make a lot. Basically, I don't follow a recipe and I just sort of improvise every time I make it.
This time, I had a big package of flat rice noodles in the cupboard,
- which I boiled briefly.
- Meanwhile, I ground up some chicken thigh from the freezer, and sauteed it with some oil, and lots of curry powder.
- Then I cut up the chard and sauteed that in oil and added some curry powder as well.
- Finally, I mixed all of them together in a big pot, and added in the shredded cabbage from the slaw (undressed, of course), for crunch (usually that role is taken by raw bean sprouts).
And there it is, a true one-pot meal!
