CSA Box Makes: Roasted Squash
Last time when I made butternut squash soup, I decided that the roasted butternut was so good on its own that I should just simply roast it next time I got it in the box.
I actually combined the roasted squash with a project I was doing for class around sustainability. I was interested in foods that come in their own containers, and squash is definitely one of them. So I hollowed out an acorn squash (top) and carnival squash (bottom), roasted the squash pieces all together with the butternut squash, and presented them in the bowls. With the super long stem on my butternut squash (see picture here), I cut and sanded the pieces into toothpicks. So the squash made the serving vessels and utensils, and all will decompose quickly in the soil.
