Wheat-Oat-Flax Buns
I'd attempted baking burger buns before, but they've always turned out too dense and rich. The recipes were probably closer to brioche with a lot of butter, so I tried this recipe with 1/4 cup of oil and one egg yolk for approximately 12 buns. I also made sure to knead for at least 10 minutes in the KitchenAid, which strengthened the dough.
They turned out really well! Though a bit flat - kind of like the newfangled sandwich thins!
Here I've prepared it with a turkey burger and baby spinach dressed in oil and balsamic vinegar.
