Weisswurst and faux Weisswurst
One of the Bavarian specialties is Weisswurst, or sausage made of veal. This stand at Viktualienmarkt, Kleiner Ochs'nbrater, says that they make it from calf's head too. It's traditionally served with a pretzel and sweet mustard. Now, after coming back to the US and reading more about it, I learned that you don't eat the skin, but rather squeeze out the meet or slice it down lengthwise and scoop it out!
