CSA Box Makes: Greens lasagna, salad and roasted yam
Since we started with City Car Share, grocery shopping has gotten a lot more convenient. But shopping has also turned into a "Supermarket Sweep"-type mad dash to buy things within the allotted time frame of the rental car. This time, I just grabbed ricotta and feta, not sure which I would use for a dish with the chard and spinach.
I ended up using both, in a hybrid spanakopita-lasagna (like spanakopita, only without the greasy pastry). Recipe here. Turned out really well! Used the chard stems too, which is what the dark red pieces in there are. Complements a light salad and roasted yam well.
